Sweet & Sour Sauce

Classic british takeaway sauce for use with Chinese Battered Chicken for Sweet and Sour
½ cupcider vinegar1 cupcaster sugar¼ cupcornflour¾ cupwater or½ cup water and¼ cup pineapple juice2 tbsplight soy sauce1½ tbspketchup1 tspground gingerpinchdried red chilli (optional)
In a saucepan combine all ingredients. Bring to a simmer, whisking to keep smooth.
Keeps for several weeks in the fridge in an airtight container
