Spiced Red Cabbage

1 tbspolive oil3 clovesgarlic, chopped½ cupsliced onion½red cabbage, sliced thin2 cupcooking apple sliced thin¼ cupwater2 tbspsoft brown sugar2 tbspcider vinegar¼ tspsalt⅛ tspblack pepper1 tspcumin seed1 tspfennel seeds½ tspgrated nutmeg
Saute onion and garlic in oil for 1 minute.
Add cabbage and apples and saute for 3 minutes.
Add the remaining ingredients and stir well.
Cover.
Cook over low heat 35 - 40 minutes.
Sprinkle with caraway seed if desired.
